So I was going to be sending you out a “final” version of my brioche formula today, but I had a slight problem with the loaves wanting to burst out of the pan for reasons I haven’t quite sorted out (too much yeast?), so that one is going back into the lab for a bit more testing.
Instead I am going to be sending out (separately), three other formulas, one for an actual final version of my sourdough discard English muffin bread, one for that millet porridge sourdough I mentioned the other day, and one for a shokupan/pain de mie sandwich loaf. I need to edit some photos and videos for the last one, so expect to see that in the next few days; the other two should be hitting your inboxes later this morning.
