This is the recipe I promised about a week ago, the sesame-spelt sourdough. It’s going to look a lot like other recipes of mine, especially the Four-fold/Loaf Classic on which it is based. What is novel here is the coat of sesame seeds, the inclusion of spelt flour, and the addition of olive oil (or toasted sesame oil, if you want to double up on sesame flavor).
At the end of the recipe, there’s a gif demonstrating how I like to coat loaves with seeds, along with details on how to do it.
