Happy Mondays, everyone. Just a quick note today before I run down to the post office to ship off another pile of Pocket Companions (including the international ones, thanks for your patience, far-away people!)
I can’t quite believe it, but the first printing of the Bread Baker’s Pocket Companion is nearly sold out! I upped the initial order three separate times as presales ticked up, thinking surely the final number would be sufficient to get me through at least the end of the year, but nope; there are maybe 15 copies remaining for now, so order soon if you want one this month. Another 1000 are on order and will be here by the end of November. Once the shop stock runs out, I’ll revert to a presale, but there will still be plenty of time to get these in your hands before the holidays if you had gifting in mind.
Substack has just added a “chatroom” feature that allows everyone to post images, which means we can do all sorts of fun things here (including sharing results from our bakes). For now, the chats can only be accessed using the iOS app (which works on both iPhone and iPad), but an Android version is on the way. I started a test thread the other day, and while it was just to play around, those of us who joined enjoyed it thoroughly. I think it will take me awhile to really dig into using it, but I think it will be great for building a more active community here. I’ll start with occasional “open office” hours, where I hang out for a few hours to answer questions or just shoot the breeze with whomever is around. If you want to check out the test thread, download the app via the button below, then click this link.
I posted a recipe to the Substack website the other day for a beet salad I developed for the Row 7 Seed Company. It’s not bread or bread adjacent, which is why I didn’t email it out, but should you want to make it (it’s good!). There’s another recipe in the works that is a bread, so stay tuned for that too.
See you all on Wednesday, when I’ll be sharing a bread recipe from a new book on Japanese cooking.

Congratulations. "The Book" arrived in ALEXANDRIA VA. It looks like the perfect quick reference. Thank you.
