Start with this wistful, beautifully-photographed Eater story by Craig Mod about walking across Japan in search of pizza toast, a snack that was first invented to appeal to American GIs. It’s served in traditional Japanese cafes known as kissaten, many of which are going out of business as they fall out of favor with newer generations of Japanese.
