Not watching GBBO is probably a good move. I like it on some level but it also drives me up the wall how people are expected to make decent bread or any complicated baked good in such short time spans and poor climate control. Manufactured drama.
I'm really curious about the winter melon mooncake-- how does it taste? I never thought winter melon would work in a mooncake since it doesn't have much flavour (or at least, the ones I grew up with doesn't-- we tend to make it into soup/broth where it can soak up the flavour of the other ingredients...)
When you get the book I would love to know how you feel about the bread recipes. As in does this book have the darker sourdoughs that are very unique among breads? I grew up with German breads in Bavaria--I just haven't seen anyone making or writing about these breads.
I'm working on some for my book! And I can recommend a few titles that cover them (in my naive assessment) well. I particularly like Jeff Hamelman's 'Bread' and Dan Leader's 'Living Bread'. Neither are solely about German sourdoughs, but they are clearly written with a lot of experience in baking them.
