Very interesting discussion. I am lucky to live in Seattle where I have great access to excellent, fresh, and interesting flour. What I have trouble with is recipes for these non-all purpose flours. I'm only semi-interested in experimenting. What I'd like is good recipes.
Agreed, both of those are excellent choices, as is Roxana Julapat's Mother Grains. And I'll have more recipes of my own here eventually, but as I implied above, I am focused on getting the "basic" recipes and techniques out first.

Southern Ground by Jen Lapidus and Home Baked by Hanne Riisgaard are both written for stoneground flours. I’ve had great luck with their recipes.
