I LOVE Za'atar, so looking forward to trying this one (despite the lack of starter!). Is it too stiff to mix by hand? I don't have a mixer at the present location.

You can definitely do it by hand, it's actually a pretty wet dough, but you'll probably need to fold it 5 times during the bulk proof.

Andrew - on step 2 for the dough - you mention to add the sugar. Is it correct to assume that you are referring to the honey as it appears on the ingredient list?

So excited to try this recipe - we all LOVE zaatar in our family!

Daniela - that's right. I based this on another formula that had sugar in it. Fixed it just now, thanks for the heads up.

I made this a couple of days ago and it was so good! I had some leftover pumpkin so added 150g to the dough and a few handsful of additional flour. I don't think it really affected the flavor, but made for a really pretty color.

I made this recipe this evening and it was so delicious! My intention was to have it with dinner tomorrow, but it made the house smell so amazing my husband and I couldn’t wait and cut into it tonight!
