At what temperature is the milk added ? There is nothing about heating it in the recipe.

Not sure what you mean. The instructions in the yudane call for boiling milk. I did edit the recipe to specify cold milk in the dough itself.

I had scrolled to just below the subsection header (couldn't see it) and was instead looking at the ingredients for the dough.
