Michael - I do, and I have found that number to work for me consistently (and I use King Arthur flour all the time). Differences often have to do with how people measure things (dip and sweep, spoon and sweep, etc.), and there is no one "exact" conversion number (ATK uses a third number as well). While it might be 16% different, in practice it doesn't add up to much, especially since all of my recipes are written in grams, not volume. And I've converted recipes to volume and the resulting doughs and breads are similar enough that it doesn't matter.
