There was some guy who tried the detroit style in that pan awhile back on Instagram... I’ll have to see if I can dig it up. It was as funny and epic as you might imagine
they did it in the Modernist Pizza book too. I have no experience with it myself. They also sell "single wide" Detroit pans, so you can get crown on three sides of each end slice
I was at a local restaurant recently where a wide range of foods are served. They push their pizza as if it is something extraordinary (I've had it once and twice and although the sauce/toppings are fine, the crust is totally forgettable). the woman at the table next to us was eating a pizza and her plate was piled high with bones. At the end of the meal she asked for them to be boxed up to take with her. I always wondered why, figuring if they weren't good enough to eat....... But maybe she was going to make pizza stock with them LOL.
Got an Ooni for the holidays and invited a few friends over for a pizza party to break it in. A few somehow turned into 20, so I've got a real trial by fire (hah) coming this evening.
Have a 5x batch of your serious eats dough recipe cold fermenting in my fridge right now, praying for success!
lol trying not to feel personally attacked by the pizza stock blurb (says the person who asked for the chicken bones at a fancy restaurant to be packed up so she could take them home to make stock)

The only reason not to eat bones is if the crust is mediocre (or worse).
