Hi Andrew, I am wondering if you have a favorite lame. I just checked out the Rosehill site and see they have a variety of lames. I’ve been using a traditional long lame from St Germain, but am curious about the round lames,like their UFO varieties. Thank you -- really appreciate your other recommendations as well.
Janet - I usually use a traditional lame, but I have a UFO and like it too, though I think it takes a bit of getting used to, especially when you want to score with a "flap"—it's a little easier to do with a long lame with a curved blade. But you can definitely do it with a UFO too.
Andrew, Until your book is released . . . are you planning on posting a list of your favorite books on bread . . . from this year . . . and/or ever? Thanks you . . .
