Off topic but this just happened. My very old, hand-me-down, Kitchen Aid, stand mixer danced it's way off the counter and crashed to the floor, never to contribute to the quest for the perfect loaf again.
I would love to hear your suggestions for a replacement: brand, power, size, lift vs one that locks into base.. I like to make 2 -3 loaves at a time.
Ugh, so sorry Sandy. The mixer I prefer these day is expensive, but would never do that, an Ankarsrum Assistent. I wrote a long love letter to the Ank that was supposed to be published on Epicurious months ago, but keeps getting delayed for some reason. One thing I write about there is the little-known fact that the Kitchen Aid manual says you should never run it above medium-low speed. Nobody pays attention to that, which is why the mixer walks around and its gears often fail. If you think you might be interested in buying an Ankarsrum, I'll email you a copy of my story.
I’d like a copy of your story if you’re willing. I have a kitchenaid 4.5 quart. Honestly, I love it and it’s never given me a problem, I’ve had it for years, but it’s on the smaller side so I can’t make double recipes in it. And I know I can get a bigger one, I think the pro models, but I just don’t trust how the newer ones are made with cheapy plastic parts, and I don’t need to spend hundreds, or even a thousand dollars on something just to have it break on me… if this one you speak of is higher quality (like things my parents generation bought) I’d be interested in hearing more about it.
I just did some quick research and would love to have your love letter. I use the stand mixer primarily to knead dough and this seems to be it's strong suit. It also has a large enough capacity to accommodate Choreg dough. Thank you!
The cream cheese situation was in part started by a cyber attack: http://www.bnnbloomberg.ca/that-cream-cheese-shortage-you-heard-about-cyberattacks-played-a-part-1.1693693. So wrong!
On Banh Mi, this is an excellent take on the layered colonial history of the sandwich and more: https://theswordandthesandwich.substack.com/p/notable-sandwiches-7-banh-mi
Sharif - thanks! I'd saved that article but not read it yet.

Anyone who wants a preview of my Ankarsrum story: Please email me directly and I will send you a file. I don't want to post it here.
And if you end up buying one, please consider using my Challenger affiliate link: https://challengerbreadware.com/product/the-original-ankarsrum-mixers/?ref=andrew.janjigian
Everyone sells the Ank for the exact same price, so help a fella out buy buying one there, if you can.
Looking forward to the story. I followed you link but, at checkout, it is asking for an affiliate code.
I don't think it's necessary to put it in again if my name is at the end of the URL when you are on the product page. (as it is above).
