Two-and-a-half years of work on the Breaducation manuscript are finally coming to a close. It is due at the end of this month, and—though I have had my doubts, even as recently as an hour ago—it looks like I will actually be handing it in on time. Even once I do, I'll have months of additional work to do, but having a full (overstuffed, in truth) manuscript on paper is obviously a huge milestone, and I am going to do my best to take that in.

Someday, I'll write about the process of researching, developing, and writing it, but right now I find myself unable to form sentences that don't say something like, "Place the flour, salt, yeast, water, poolish, and yolk in the bowl of a stand mixer and, using the hook, mix on low speed until uniform and beginning to develop strength, 4 to 6 minutes."

With all that in mind, I am going to take the next two weeks off from Wordloaf to button the manuscript up and at least attempt to rest a little. I will be back on 7/16, and (huzzah!) the Friday Bread Basket will return a few days after that (oh, the backlog!).
